I don't know about you, but I rely on blogs and cookbooks for advice when I'm trying to cook healthier—in fact, this recipe a friend sent me for a Paleo breakfast casserole basically got me through my Whole 30 (I never even got sick of it). Having meal inspo at the ready is key to sticking to your goals, and we just so happen to have found the best Paleo cookbooks out there. In case you aren't familiar with the Paleo diet, people associate it with eating like a caveman—you basically consume a lot of protein, fresh veggies, and good fat while saying goodbye to processed foods and most sugars.
One-bowl meals are another lunch-friendly preparation that’s easily adaptable to paleo eating. This one calls itself a taco bowl, but the bowl is lettuce or other broadleaf greens instead of corn tortillas. In fact, all the vegetables in this recipe have healthy doses of vitamins C and A (a half-cup of raw spinach has 1,400 IUs of vitamin A). Vitamin C is sensitive to heat, so the C in this case comes from the fresh greens and the orange slices, rather than from the large serving of orange juice that cooks the meat.

So about the recipe… You have to buy the Paleo wraps online or if you’re from my area (Mandeville, Louisiana), my friend at Vive sells them. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. Mayo can be tough if you don’t follow directions. Happy lunch-making! You wouldn’t be able to eat traditional tabbouleh while following the Paleo diet because it’s made from bulgur, but you can have as much of this cauliflower tabbouleh as you want. Cauliflower is a very versatile food and is used in Paleo recipes to replace everything from rice, to pizza crusts. The idea behind this cookbook is interesting. Basically, the author is relying on 15 key ingredients. With these, she offers 150 different recipes and a total of 450 variations. Now, this doesn’t mean that the book only uses 15 ingredients. Instead, those ingredients act as bases for the recipes and are expanded upon. So, you will still need some other ingredients.

Eggs are an excellent foundation for paleo breakfasts. Over easy, scrambled, poached, baked, hard-boiled, soft-boiled, made into an omelet—you name it. You can also experiment with paleo pancakes, using protein powder, coconut flour, or almond flour in lieu of white flour (tip: add baking soda and vinegar for a fluffier outcome). Chia puddings, sweet potato "toast," and paleo-friendly smoothies are also fair game.
Steak-centric salads are a staple of the American gastropub menu. Unfortunately, the “salad” interpretation is a bit loose—the lettuce merely a bed for a Flinstone-sized protein serving, the butter-yellow croutons, tons of cheese, and creamy dressing blanketing all. We kept the chargrilled steak then topped it off with good-for-you avocado and a vinaigrette that complements the vegetables rather than disguise them. If you thought pulled pork sliders were off the menu, you were wrong. You just have to find creative workarounds when you are making Paleo recipes. Oh, that’s weird. Maybe you are reacting to something your weren’t eating before starting this diet? I suggest trying to write down everything you eat and how you feel after every meal and about an hour after the meal and then try find a pattern for the bloating. It took me a while for example to figure out I react with horrible heartburn when I eat tomato sauce. Anything containing tomato sauce is super hard for me to digest.

Hey Amanda, I’d love to try this as well. I’m not sure if they will freeze well, but I don’t see why not. I think freezing the chicken salad would be smarter, and taking that out on a Sunday and just packing those up for the week and storing in the fridge may be better. The wraps probably don’t freeze well. But for most of my once a month cooking, it always requires a bit of assembling the week of! Does that make sense?
This is the worst cook book I have ever bought. Every recipe I have tried so far has had errors. It will either give a list of ingredients and then fail to tell you what to do with one of them or like the one i am cooking right now...it tells you to roast the chicken at 475 for 25 minutes and then reduce the temperature and continue to cook 45 minutes....ummmm what temp should a person reduce it to? Good thing I consider myself a good cook and know what a whole chicken bakes nicely at. But for some people this could be really frustrating and it is for me when I am in a hurry to make a meal for my family. Buyer beware. Im sure there are better Paleo cookbooks out there.
