So about the recipe… You have to buy the Paleo wraps online or if you’re from my area (Mandeville, Louisiana), my friend at Vive sells them. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. Mayo can be tough if you don’t follow directions. Happy lunch-making! This is a beautifully photographed book, full of mouthwatering recipes. I recommend this to anyone that is starting out on the Paleo diet. The recipes are interesting, but approachable. There is such a wide variety of recipes, ranging from classics to ethnic-inspired. There is also a large dessert and baked goods section, for those of you that have a sweet tooth or really miss some of your old favorites.
Is this book 100% squeaky-clean strict Paleo? No. Ultra-strict Paleo templates call for avoidance of salt, extreme reduction in carbohydrate intake, and never eating dairy of any kind. When performance-minded people blindly follow strict Paleo, the rate of failure and abandonment is high. Why? They haven’t properly tailored Paleo principles to their training demands. As such, you’ll see salt, carb-dense veggies and even some full-fat dairy like ghee in some recipes. And, you’ll even see the occasional option for things like whey protein, white potatoes and white rice. These may not be right for every person, but it’s my stance that if these foods are not problematic for you and may help your performance and recovery, they shouldn’t be 100% off the menu forever.

These pork chops are made on the grill, so they are going to seal in all of the delicious grilled flavor. Plus they have added a nice mustard coating on it, so you’re going to have a bit of spiciness here as well as the flavor from the pork. They topped it off with basil apricot relish so there will be a sweetness to balance out the mustard, and sweet fruits like apple sauce are often paired with pork chops because they simply go really well together. You’ll want to make sure that you get a vegetable with this. It’s nice to have some fruit with it, but vegetables get top rank along with meat.

Hey Tessa! Good question. So after calculating from my credit card, I spend about $275 on average on food without really budgeting. I stick to eggs and chicken as my main form of protein and look for when grassfed beef is on sale. Even at $7 a pound I can get about 3 meals out of that, so it’s not too bad. I will probably be doing a post on this in the next few months when I get back to school and am keeping track of exactly how much I spend on what.

There's no one "right way" to do paleo. If you're just starting out, it may take some time to figure out what feels best.
