I had never heard of the Paleo diet before I read this book but as a Mexican Cookbook it is really good. There are the recipes you would expect to see - empanadas, enchiladas, fajitas and such plus many recipes I have never seen before. There are lots of yummy looking recipes that I will be trying out. I am especially looking forward to trying the Salted Chocolate Ganache Tarts!
This recipe actually inspired my big project, Bravo For Vive, a line of Paleo foods for concessions. I thought these wraps would be awesome for tailgating and stadium food, and I wanted to be able to help those who want to eat healthy but have no option to in these situations! It’s got seven fueling strategies (when training falls at different times during the day), and fifty meal combinations (think of it like the beginnings of a meal plan). The macros for each recipe are provided. Some of Michelle Tam's recipes are a little more difficult than I like to attempt during a Whole30 (I prefer to keep it simple), but others are in heavy rotation (especially the green chicken and the Peruvian chicken). These tiny tacos are served up on jicama shells. The rest of the ingredients are placed in the slow cooker until the meat is just right. That means you can pop it in a few hours before the big game, and serve them up when everyone has arrived. They are billed as being great sports food, because they are smaller than a traditional taco, so they’re mini sized and good for serving. But they still have plenty of flavor thanks to all of the cilantro, garlic, lines, and oregano. The jicama shells really help to avoid the use of a flour tortilla.
