I had never heard of the Paleo diet before I read this book but as a Mexican Cookbook it is really good. There are the recipes you would expect to see - empanadas, enchiladas, fajitas and such plus many recipes I have never seen before. There are lots of yummy looking recipes that I will be trying out. I am especially looking forward to trying the Salted Chocolate Ganache Tarts!

We're not entirely certain about the history of this classic recipe's name, but perhaps it has something to do with the spicy kick of the sauce. Our version is a shakshuka-like dish in which fiery harissa paste and heady spices slowly infused a rich tomato sauce where eggs gently poach. Look for jars of harissa with the Middle Eastern foods in your supermarket; you can substitute a half to full teaspoon of crushed red pepper in a pinch. The cook time for the eggs depends on the specific heat of your slow cooker. Yes, the egg is raw, and raw egg is perfectly safe to consume, so long as you trust the source of your eggs. Anything you buy from a grocery store should be set, and if you get them from the Farmer’s Market or grow your own, just make sure you wash the shell VERY WELL before using raw egg, as this is where most of the contaminate comes from. (The shell isn’t sterile, you crack the egg, the shell contacts the egg and leaves some salmonella behind, the egg is now unsafe)

Tacos can be tricky to make Paleo, but they’ve figured out a good way here by using portobello mushroom caps for the shells. These caps do a good job of holding all of the yummy taco-inspired ingredients, and by the time you finish one of these you’ll feel satisfied, and like you just had Taco Night. Oh, that’s weird. Maybe you are reacting to something your weren’t eating before starting this diet? I suggest trying to write down everything you eat and how you feel after every meal and about an hour after the meal and then try find a pattern for the bloating. It took me a while for example to figure out I react with horrible heartburn when I eat tomato sauce. Anything containing tomato sauce is super hard for me to digest.
