What I love the most about this cookbook is that it is different. Most paleo cookbooks tend to follow the same general patterns and styles, often resulting in dishes that are fairly similar to one another. But, that’s not the case here. Instead, the recipes take their inspiration from southern cooking and give you the chance to still enjoy those flavors and styles of meals.
Make-ahead meals work well in so many situations, especially for people who have busy households or simply don’t have much time for cooking. This particular cookbook takes advantage of that concept and directly applies it to paleo cooking. In it, the author offers 85+ different recipes, which are designed so that they can be easily frozen and reheated. Likewise, many of the recipes use a slow cooker, which can act as another way to save time.
Dinner.  The one meal everyone in my family has to agree on.  The one meal that I need to prepare for all 5 of us at the same time.   The meal that I think about the most when grocery shopping, meal planning, and in my everyday life.  Coming up with new, “fun”, tasty, and, above all else easy Paleo dinners for weeknights is very often a challenge in my life!

Not paleo specifically, but this gorgeously designed book is full of plant-forward recipes that are either Whole30-compliant already or require a little bit of adaptation to fit into the plan. At any rate, I always welcome extra inspiration when it comes to vegetables, so I love paging through this one. Even though this explanation of how most Paleo meals seem pretty simple and straightforward, it’s easy to get bored or to eat the same things over and over again. For this reason, I’ve decided to include here 10 easy Paleo recipes that can all be prepared in about 20 minutes or less and that call for very few ingredients, but still have something in them that makes them very special and tasty. I hope you’ll find here a new favorite that you’ll be able to prepare over and over again when you’re either on the go, not in the mood for cooking or simply because sometimes the simplest meals are really the best.

A very hot oven quickly roasts the potatoes and finishes the chicken without overcooking. The simple oil mixture, using solely extra-virgin olive oil to keep it paleo-friendly, packs a ton of flavor without adding excessive calories or fat to an already flavorful dinner. To serve a family, double the recipe and use an additional sheet pan for added space. You can substitute fingerling potatoes, halved lengthwise, for the small Yukon gold potatoes.


Spiralized sweet potatoes make for a hearty pasta replacement in this fresh feeling paleo meal. Puttanesca is an ultra-savory Italian pasta dish that typically consists of capers, anchovies, olives, tomatoes, garlic, and olive oil. In this iteration, fresh tomatoes meet their salty match for a hearty, dairy-free pasta dish that's light on calories and heavy on flavor. For a vegetarian option, leave out the anchovies and use vegetable broth instead of chicken.
Jambalaya can be a very hard recipe to make, which is why it’s good that this uses the slow cooker because you can take out some of that complexity. It’s also a dish that lends itself nicely to Paleo eating because it includes plenty of different meats, as well as a good amount of vegetables. For example there is an entire head of cauliflower added to this, and it helps to balance out all of the sausage and chicken. They make it even easier by using premixed Cajun seasoning, but they also point out that you can use your own if you happen to have some already made.

This recipe is inspired by Indochina cuisine and features chilli chicken that gets marinated in a special blend of spices. The red chillies are going to give this a pretty good spiciness to this dish, so if you don’t like spicy foods you may want to pass on this one, or make adjustments to the peppers, using ones that aren’t as potent. It’s served on a bed of cauliflower rice to keep it Paleo friendly. You’ll find that cauliflower is a versatile way to make rice and couscous replacements, and it satisfies your vegetable requirement.

I had never heard of the Paleo diet before I read this book but as a Mexican Cookbook it is really good. There are the recipes you would expect to see - empanadas, enchiladas, fajitas and such plus many recipes I have never seen before. There are lots of yummy looking recipes that I will be trying out. I am especially looking forward to trying the Salted Chocolate Ganache Tarts!

Kelly is such a talented photographer. Her book makes me want to eat the food right off the page. Equally as good as the photography are her recipes. Kelly incorporates chocolate into each recipe so thoughtfully that we cooked from it all week and didn’t feel chocolated-out! The book is packed with delicious recipes for treats, but it also has a handful of savory recipes with a chocolate twist. If you enjoy chocolate even half as much as I do, then this book is a must-have!
