FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! I use grapeseed oil because the olive oil is a bit bitter for me.

Hey Tessa! Good question. So after calculating from my credit card, I spend about $275 on average on food without really budgeting. I stick to eggs and chicken as my main form of protein and look for when grassfed beef is on sale. Even at $7 a pound I can get about 3 meals out of that, so it’s not too bad. I will probably be doing a post on this in the next few months when I get back to school and am keeping track of exactly how much I spend on what.

Here’s another complete paleo meal in one “container.” The red bell peppers get cooked to mellow sweetness, but still hold their shape enough to keep other delicious ingredients inside. This recipe, with its peppers and tomatoes, is a great source of vitamins A and C, even after the vitamin loss that cooking causes. It’s also a good source of protein (4 ounces of lean turkey has over 20 grams).
This cookbook is a little franker than most, which isn’t that obvious from the cover. In particular, you’ll find the odd expletive in place and much of the writing is more conversational than other cookbooks. This is an easy way to musakhan, and if you don’t know how to make this traditional dish, this is a great place to start. It uses plenty of chicken thighs, so you’ll be all set in the protein department. It also contains plenty of spices like allspice, cloves, and saffron. You’ll be getting a few onions in this, but you may want to eat a salad with it because there are not a lot of vegetables being used, and you want to create a nice balance between all that chicken and your vegetable intake. Don’t be afraid to try new recipes on Paleo, trial and error is how our species made it this far.
Hey Amanda, I’d love to try this as well. I’m not sure if they will freeze well, but I don’t see why not. I think freezing the chicken salad would be smarter, and taking that out on a Sunday and just packing those up for the week and storing in the fridge may be better. The wraps probably don’t freeze well. But for most of my once a month cooking, it always requires a bit of assembling the week of! Does that make sense?

Is this book 100% squeaky-clean strict Paleo? No. Ultra-strict Paleo templates call for avoidance of salt, extreme reduction in carbohydrate intake, and never eating dairy of any kind. When performance-minded people blindly follow strict Paleo, the rate of failure and abandonment is high. Why? They haven’t properly tailored Paleo principles to their training demands. As such, you’ll see salt, carb-dense veggies and even some full-fat dairy like ghee in some recipes. And, you’ll even see the occasional option for things like whey protein, white potatoes and white rice. These may not be right for every person, but it’s my stance that if these foods are not problematic for you and may help your performance and recovery, they shouldn’t be 100% off the menu forever.

I make chicken salad almost weekly…I will have to try them in the wraps soon!!! Just a tip I am so thankful to have discovered. Paleo mayo becomes 30 secs in the making and SUPER EASY if you have an immersion blender! It was well worth my $15!! Just put all the ingredients you listed including the oil in a large mouth pint and a half mason jar put the blender to the bottom and blend! There is a video online somewhere. It is the original recipe I found and that blogger took a video of making it. A real time saver!!
