So about the recipe… You have to buy the Paleo wraps online or if you’re from my area (Mandeville, Louisiana), my friend at Vive sells them. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. Mayo can be tough if you don’t follow directions. Happy lunch-making! If you are planning on doing a Whole30 in the New Year, then this book is a perfect resource. Almost all of the recipes are Whole30 approved. The first 30 pages of this book are filled with information that will teach you how to adapt a Paleo lifestyle and live it successfully. This book is packed with 200 recipes and quick meal ideas! Melissa has even included adaptations for those of you following an Autoimmune Protocol. Some of Michelle Tam's recipes are a little more difficult than I like to attempt during a Whole30 (I prefer to keep it simple), but others are in heavy rotation (especially the green chicken and the Peruvian chicken). This dish is inspired by Kaldereta, a dish from the Philippines that is generally made with goat shoulders and liverwurst. They’ve replaced the goat shoulders with beef, but they’ve kept the liverwurst which is a good way to incorporate some organ meat into your caveman diet. If you end up liking it there are lots of other recipes you can use it in. The traditional way of making it can be pretty spicy with the use of hot peppers, and here they’re using a red pepper, as well as chile flakes, so it will be a bit spicy, but you can make adjustments to it depending on your personal taste.

Gelatin is something that you can definitely have while on the Paleo diet, and they’re making full use of it here. Of course real oranges account for the orange taste, which is a recurring theme with Paleo, it uses natural and basic ingredients to accomplish its flavor goals.You’ll have to decide for yourself if you want to use the food coloring to make this look orange, and if so how orange you want it to be. Paleo purists wouldn’t use any food coloring.
These berries are wrapped in prosciutto and stuffed with a blend of cheese and greens. They make for a fun snack, and are also great for entertaining. If you’ve been worried that you can’t host a party or serve guests Paleo foods, there’s no need to worry. Many of the dishes that you make will not look any different than “normal” food, and if you don’t want to tell anyone it’s Paleo friendly, you don’t have to. In this recipe they’re using ricotta, but they are making sure it’s grass-fed. If you are unable to process any sort of dairy you’ll want to omit this part, but many Paleo followers allow a bit of high quality cheese now and then.

Meatloaf is one food you don’t have to give up while following the Paleo diet. The great thing about meatloaf is everyone usually likes it enough to make it a regular menu item. In this version it has been miniaturized so that you don’t end up making one big loaf, but rather individual-sized portions so that everyone gets a nice outer crust, and it avoids the problem of soggy or crustless middle section pieces. You’ll notice that the breadcrumbs have been done away with as they aren’t allowed on the Paleo diet. You won’t notice they’re gone because there’s coconut flour instead.
Paleo in 28 is designed to get people started with the paleo diet and it performs this role well. By relying on relatively few ingredients overall, this book means that you’re not forced to go out and buy a large number of ingredients all at once. There will still be some new ingredients if you’ve never tried paleo before but the nature of the book means that this shouldn’t overwhelming.

The great thing is that because it is using the slow cooker it is going to be a really easy as far as preparation goes. I had never heard of the Paleo diet before I read this book but as a Mexican Cookbook it is really good. There are the recipes you would expect to see - empanadas, enchiladas, fajitas and such plus many recipes I have never seen before. There are lots of yummy looking recipes that I will be trying out. I am especially looking forward to trying the Salted Chocolate Ganache Tarts!
