So about the recipe… You have to buy the Paleo wraps online or if you’re from my area (Mandeville, Louisiana), my friend at Vive sells them. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. Mayo can be tough if you don’t follow directions. Happy lunch-making! If Indian food is one of your favorite cuisines be sure to try out this fried beef recipe, which gets the Paleo seal of approval. It’s made with hearty chunks of beef stew meat, and has a list of seasonings you may have to go shopping for, but it will be worth it. These include turmeric and garam masala, both of which will act to give it that distinct Indian flavor. The meat is marinated, and then sauteed, with spices and seasonings added to both steps, so you know that this is going to knock your socks off, and the meat will be tender and flavorful.

I am doing a low carbohydrate (but not totally Paleo) diet. There are a lot of great recipes in this book. I've already made about half a dozen of the meat dishes, several of the veggies and a dessert. The book is well laid out and truly has a wide variety of types of dishes. I've purchased several of these types of cookbooks, and by far this one is the best. Several co-workers have already ordered their own after looking through mine.


This recipe is inspired by Indochina cuisine and features chilli chicken that gets marinated in a special blend of spices. The red chillies are going to give this a pretty good spiciness to this dish, so if you don’t like spicy foods you may want to pass on this one, or make adjustments to the peppers, using ones that aren’t as potent. It’s served on a bed of cauliflower rice to keep it Paleo friendly. You’ll find that cauliflower is a versatile way to make rice and couscous replacements, and it satisfies your vegetable requirement.

This flatbread pizza is billed as being grain free and nut free, which is interesting because many Paleo pizza crusts will contain almond flour to replace ordinary flour. This recipe uses sunflower seed flour, a very unique choice for a white flour substitute, and it combines that with tapioca flour to live up to the nut-free promise. You are free to add your own toppings, or go with what they’ve used, including fresh tomatoes, spinach leaves, and season things up with oregano, basil, and garlic powder. It’s nice to have a guilt-free delicious flatbread crust recipe to have on-hand anytime you get a pizza craving.

Hey Amanda, I’d love to try this as well. I’m not sure if they will freeze well, but I don’t see why not. I think freezing the chicken salad would be smarter, and taking that out on a Sunday and just packing those up for the week and storing in the fridge may be better. The wraps probably don’t freeze well. But for most of my once a month cooking, it always requires a bit of assembling the week of! Does that make sense?

It was time well spent though. Taking time away from all your devices and things that compete for your time is extremely helpful and allows this space to think that you might not otherwise get. I highly recommend you do this if you can. It doesn't have to be on a beach either – your couch is a perfectly good place to do this, but with the tv off and your phone in another room. (This is also different than meditation. Meditation is trying to achieve the absence of thought, this encourages thought.)

Chicken Curry Salad Ingredients: - 4 chicken breasts - 2 cups green grapes - 1/3 cup Paleo Mayo - 1 heaping tablespoon curry powde...r - 2 heaping tablespoons honey (or more!) - 1/2 cup slivered almonds - Sea salt (to taste) - Black pepper (to taste) Steps: 1. Cover your baking sheet with aluminum foil. 2. Set broiler on high, arranging rack so that the chicken will be about 2 inches from the heat. 3. Rinse your chicken breasts and cut off any excess fat. 4. Place chicken breasts side by side on baking sheets. 5. Sprinkle sea salt and pepper, to taste. Place chicken in oven and broil for 14 minutes. 6. Carefully flip each chicken breast, and place back in oven for it to continue to broil for another 14 minutes. 7. Once chicken cools off, grab your sharp knife and cut all four chicken breasts into small squares. 8. Place chicken, grapes, and slivered almonds in your mixing bowl; using your wooden spoon, mix them together. 9. In a separate bowl, mix your Paleo Mayo, honey and curry powder. 5. Cassava Pizza Crust: Speaking of Italian comfort foods, you can still have pizza Fridays. This pizza crust is made of mashed cassava (also called yuca), which crisps up nicely (as our Caribbean friends who traditionally cook with yuca already know). Top it with your favorite veggies and nut cheese and you’re good to go. (via Predominantly Paleo)
The mild flavor of spinach makes it wonderfully adaptable to sizzling garlic and spice from the crushed red pepper. For fullest flavor, cook spinach only until it begins to turn limp. Sautéed spinach can be made in a snap and pairs perfectly with almost every protein. If you have leftover spinach on hand or any wilting leafy greens, sautéing with a little olive oil and garlic instantly brings it back to life. Starting aromatics in a cold skillet lets them infuse the oil. The garlic also has less chance of burning. Let cooked potatoes dry out so they'll be extra crispy in the hash. Leftover cooked potatoes would be even better. Ground chicken has a touch more fat than ground chicken breast, key for more flavorful hash. Serve with Sautéed Spinach with Garlic and Red Pepper.

As some of you know, I worked for Laura Fuentes at MOMables last summer. I like to say she gave me the “Blogging for Dummies” course. She had it down, but she needed an intern and I wanted to learn. It was such a fun experience, and now whenever I’m in town I must visit for Bulletproof Coffee or a Paleo treat together. We both love healthy food, blogging, and coffee. A lot.
